The Perfect Pancake

In my household growing up, pancakes were synonymous with Sunday mornings. They were one of the recipes in my dad's arsenal of meals that he always handled instead of my mom. Others were subs, steak and eggs, and anything smoked. Most of these were made on Sundays, the one sacred day when dad was home all day. We went to church, came home to a big Sunday supper (lunch) and then went to church again that night, and snacked on leftovers for dinner. Or had popcorn for dinner. That was one of my mom's favorites.




Sundays, more often than not, started with pancakes. And they are still beloved to me. When I was the only sibling left in the house, I made them often from a huge Bisquick box my mom most likely got from Costco. Now, I make them from scratch, because they are 1) very easy, and 2) just taste better. Trust me.



Everyone in my house liked their pancakes differently. Peanut butter, syrup, butter, maple syrup, plain with nothing on it, powdered sugar, fruit on top or included in the batter. The options really are endless. I personally loved peanut butter with regular syrup, and a giant glass of milk to drink with it. But sometimes I crave something even sweeter. Like powdered sugar, maple syrup, and icing. The fruit is for health. Obviously. :)


The icing/glaze is of course optional, but it's also very easy to make! Just mix 1 cup of powdered sugar, 1/2 tsp of vanilla, and 2-3 tbsp of milk, depending on how thick you'd like it. Just mix it in 1 tbsp of milk at a time.


***If you don't have buttermilk, you can certainly use milk instead. Just sub the baking soda for 1 1/2 tbsp of baking powder.


Ingredients


2 cups all purpose flour

1 tsp baking soda

1 tsp salt

1 tbsp sugar

1 3/4 cups buttermilk

2 eggs

Neutral oil or butter, for cooking


Method

  1. Beat the 2 eggs into the buttermilk.

  2. Mix together the dry ingredients. (Flour, baking soda, salt, sugar)

  3. Add the wet mixture to the dry ingredients, and combine.

  4. Add 1 tbsp neutral oil to a large pan on medium heat. Once it heats up, add batter, 1/2 cup per pancake, and brown on both sides. Serve hot with your favorite toppings.
