There are a couple of different things that one needs in life. A great hairdresser, a pup to come home to, and a good, reliable rub. This is one that I use regularly on poultry, though it isn’t your typical sage-thyme-salt-pepper mix. It’s smoky, a little spicy, and a straight-up delight to the taste buds. I use this mix at least once a week, but then again I eat a lot of chicken.
My favorite way to use this rub is to mix it with some apple cider vinegar, oil, salt, and to let it mingle with some chicken thighs for about half an hour. After that, I throw the thighs on the grill. The smoky, firey, grilled taste compliments the smoky, robust notes of this mix (high-key) perfectly.
Don’t forget to add salt. This recipe doesn’t contain any, because I salt my food separately. (And you should too.) See my notes below about how much to add if you’re not salting your poultry before you start cooking (but you should).
Smoky and Savory Poultry Spice Rub
***This spice mix does not contain salt. I would recommend that you salt your poultry at least an hour before you cook it if possible. If not, add 1.5 tbsp of salt to this mix when cooking.
1 tbsp smoked paprika
1 tbsp garlic powder
1 tsp black pepper
1 tsp chili powder
½ tsp allspice
¼ tsp cinnamon
¼ tsp cayenne
Mix the spices together in a small container. Store in a small mason jar or in cleaned, used spice bottle.
Smoky and Savory Poultry Marinade
Makes enough marinade for about 3 lbs of poultry.
¼ cup vegetable oil
2 tbsp apple cider vinegar
3 tbsp Smoky and Savory Poultry Marinade
1 tbsp kosher salt
Mix together the oil, vinegar, salt, and spice blend.
Pour over chicken to cover it in either a plastic bag or airtight container, and let it sit for at least 30 minutes. Cook the chicken however you desire. (But I would recommend you grill it!)
