It is wintertime here in NYC, and I'm craving bright, happy flavors. So I made pesto! This is so ridiculously easy. Put some basil in the food processor with a couple of other things...and BAM. You've got a delicious, beautiful-tasting sauce for your pasta. Easy to whip up and can store for several days.
Look at the green goodness. Fresh noodles, some extra parm, and maybe some grilled chicken breast, and you've got yourself a perfect meal. Even if it's not traditionally a winter meal. If you're not feeling pasta, put this on some brie, bake it, and serve with crackers. Or put it on an Italian sando! Honestly, the options are endless.
INGREDIENTS
4 cups fresh basil
1/3 cup pine nuts
2 garlic cloves
1 tsp salt
1/2 cup (good) olive oil
1/2 cup freshly grated parmesan cheese
METHOD
Place the basil, pine nuts, garlic, and salt in a food processor. Pulse until ground, about 10-15 seconds.
With your food processor on low, drizzle in the olive oil until blended. Then add in the cheese and mix on low until just blended, not longer.
NOTE: You can store this for a couple of days, but do so with a layer of olive oil on top.
