Look, I'm obsessed with grilling. At this point it's just a part of who I am. As much as I don't want to be labeled "the grill girl," I will continue posting grill content. Wait. Maybe I do want to be called grill girl? That's cute, right?
I'm getting off topic. Last night I decided to cook my broccoli on the grill, and honestly it was because I wanted to minimize kitchen clean-up. I normally am not a roasted broccoli kind of girl, but when they're "roasted" on the grill...that char flavor does wonders! I cooked it alongside grilled chicken thighs (one of my most favorite dinners) for a one-grill meal!
I cut two heads of broccoli into florets, and just seasoned with salt, pepper, garlic powder, and olive oil. I wrapped it up in a tin foil pouch and the grill did the rest! So delicious and easy. And bonus--minimal cleanup! One of my favorite things in the world. :)
For the chicken:
2 lbs boneless skinless chicken breast
1/4 cup olive oil
3 tbsp apple cider vinegar
1 tbsp salt
1 tsp paprika
1 tsp chili powder
1/2 tsp cinnamon
1/2 tsp all spice
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp black pepper
For the broccoli:
2 heads broccoli
2 tbsp olive oil
1 tsp kosher salt
1/2 tsp garlic powder
freshly ground black pepper to taste
Method:
Preheat your grill to medium high. Toss the chicken with all the spices, olive oil, and apple cider vinegar. Let sit for at least 20 minutes. You can marinate it all day though!
While the grill is heating up and the chicken is marinating, cut the (washed) broccoli into florets and place on a large piece of heavy duty aluminum foil.
Add the salt, pepper, olive oil, and garlic powder to the broccoli and mix it up with your hands. Close the foil into a pouch, and place on the grill. You'll want to place it on the top rack if you have one, not directly on the heat source.
After the broccoli has been cooking for 12-15 minutes, add the chicken to the grill. Grill on medium high heat for about 6 minutes each side. Once the chicken is done, your broccoli should be done too.
