Sometimes I just want cheese for dinner. Just, straight up cheese. Okay--I eat it with crackers and some fruit and if I'm feeling fancy, like I was when I made this board, it becomes a whole charcuterie feast. My husband and I sat down in front of movie with a bottle of wine and this board, and it was a perfect Saturday night date. Cheese, wine, movie, person you love a lot? I mean come on, people. That's the good stuff.
I got almost everything on this board from Trader Joes. They just built one by my house, the second one in Nashville, and it is a Godsend. They normally have a great selection of cheeses and their dried fruit and nuts (and wine!) are really reasonably priced.
Here's what's on this bad boy:
Brie with pepper jelly (microwaved to get all melty and then transferred to the board)
Goat cheese doctored up with fresh lemon juice and honey
Manchego (the sliced-all-fancy-one)
Cheddar (the crumbled one)
Cucumbers
Carrots
Strawberries
Blackberries
Dried apricots
Pomegranate seeds
Salami, prosciutto, capocollo
Dill Pickles
Cracker assortment
A cheese board is a choose your own adventure dinner. Use the cheese you want! Use the fruit you want! Use the meat you want! (Or don't use meat at all, veggie friends!) Boards are really fun and don't take too much time to make. No cooking required, just assembly! And don't forget, friends, cheese is life.
