Buffalo Chicken Dip

Picture this. It’s February. Football is still on. In fact, today is the Super Bowl. No one is sick, and you haven’t heard the word “pandemic” in years. You roll up to your friend’s house, who is hosting a party for the big game, and you hug that friend when you walk in the door. You HUG them! No one is wearing masks. You walk up to the table to set down your famous buffalo chicken dip, and you pour the chips in a bowl next to it. You make yourself a plate of all the Superbowl goodies your friends brought, grab yourself a beer, and sit down to watch the game. God willing, the Falcons are playing in it. You go back to the table for seconds, and your dip is gone. You made a double batch, how could this be?


It’s because this recipe is that good. I bring it to every Superbowl party, Grammy party, housewarming potluck, and any general social event that requires apps. I frequently have “appetizer nights” for dinner, normally as a treat on a Friday or Saturday night, and this dip makes an appearance 90% of the time. If you love all things buffalo, make this dip!



**As far as the chicken goes, I either use a rotisserie chicken, or I use this recipe to quickly cook chicken breasts in my pressure cooker.



Ingredients:


2 cups of shredded chicken**

¾ cup Franks Red Hot (this is non-negotiable. Use Franks.)

¾ cup crumbled blue cheese

¾ cup ranch dressing

8 oz (1 package) of cream cheese, softened to room temperature

Black pepper to taste



Method:


  1. Preheat oven to 375 degrees

  2. Mix together all ingredients in a 8x8 glass baking dish, or similar size, until combined.

  3. Bake for 15-20 minutes, until bubbly.


That’s it! Mix the ingredients, put them in the oven. Take dip out of the oven and serve with crackers or (my favorite) tortilla chips!
