Broccolini and Cabbage Sheet Pan Dinner with Sausage

If you need an easy, one pan dinner, this one is it. There are about a million variations you can do, but the concept is sound. Roast veggies and sausage on a pan, serve it alone or with a grain, such as quinoa or rice. BOOM. DINNER.



My mom used to make kielbasa sausage and cabbage, so it’s comfort for me. She used to saute it all in a pan and serve it with mac and cheese. And while sometimes there’s nothing I want more in the world than a box of kraft (the powder variety, not the weird cheese sauce kind, fight me on it) I decided to make this dish my own, and add my own flare and technique. That flare comes in the form of broccolini! I have this weird thing about roasted broccoli. It tastes weird to me, and I hate it re-heated. However, it’s little form, broccolini, tastes great roasted to me! So that’s what we’re using, along with an orange bell pepper and cabbage “steaks.”


Instead of cutting the cabbage into bite-sized pieces, and sauteeing them with onions like my mom used to do, I sliced it thick, rubbed it with olive oil and seasonings, and roasted it flat. It’s hearty and warm and is a perfect compliment to the rest of the dish. I served this over quinoa (cooked to package directions, then added a dash of olive oil, salt, and a couple tablespoons of lemon juice).





Ingredients


1 bunch broccolini

1 orange bell pepper

½ head cabbage

1 package polska kielbasa sausage

2 tbsp olive oil, divided

Kosher salt

Freshly ground black pepper

½ tsp Garlic powder



  1. Preheat your oven to 375 degrees, and grease a sheet pan.

  2. Wash and prep your veggies: Remove the core and seeds from the pepper and slice into strips. Cut the end off of the cabbage and slice half of it into inch-thick “steaks.” Trim about ½ inch off the bottoms of the broccolini.

  3. Spread out the cabbage steaks on the sheet pan (using half of the cabbage, you should have 3-5). Pour ¼ tbsp olive oil on each, and rub it in. Lightly season with kosher salt and black pepper.

  4. Toss 1 tbsp olive oil with the broccolini and peppers, and season with kosher salt, black pepper, and garlic powder. Spread out on the sheet pan.

  5. Cut the kielbasa into bite sized pieces, and place on the pan with the veggies.

  6. Bake on 375 for 22-25 minutes. Serve over quinoa or rice, or by itself!
