ABOUT EMILEE
Hey, friends! My name is Emilee. I'm here to help you make really delicious, thoughtfully prepared food. Less cans, and more market stands. Less diet foods, and more whole foods. Less guilt, more happiness.
Making food and serving it to people is magic. Scratch that. Making good food and serving it to people who genuinely enjoy it is magic. Now, everything I've ever made does not fall into that magical realm. The first hundred or so times I attempted biscuits after moving from Georgia to New York come to mind. And the year I completely botched the mac and cheese at Thanksgiving. But the beautiful thing about cooking is every time the pan gets hot, you get to learn. And I've been learning my whole life. From my Mom, mostly, and from books and shows but most importantly, from experience. If you're afraid of the kitchen, don't be. I want to help give you some confidence. So from one home cook to another, you've got this.
When I’m able to create something that makes people close their eyes, relax into their seat, and smile silently, it’s a magical moment for me. Food is comfort, and when I can give someone comfort through something other than words, it almost means more. When my husband and I moved to New York (first Brooklyn, then Manhattan, then Queens) we were lonely. I used to quell that loneliness with attempting to make biscuits. I was attempting to make some of that comfort for myself. (I'm happy to say that "attempting" is now a "confidently making.") I also tried to copy the cheese grits from my favorite diner and my Mom’s chicken and dumplings. Now that we’ve left, I have a gaping hole in my heart that used to be filled with concrete and construction workers and tourists and rooftop bars. Now I try to fill it with the food I miss from New York. Thai Curry Soup, Dumplings, Macarons, Croissants, Ramen, Tikka Masala. The list goes on.
When we lived up there, biscuits, grits, fried chicken, and sweet tea all made me lean back and smile. Comfort. Now that I’m in Nashville, I yearn for quick place to grab a kale salad, churros, and good, quality sushi, and not the kind that tastes like fish. The kind that tastes like butter. To me, places are food and people. When I want to feel New York, to really feel it, I’ll make homemade Italian food and drink a bottle of red. Or I’ll gather my friends and force them to sit in the sun and drink mimosas. (If there’s one thing New York taught me, it’s how to sit in the sun for hours and drink mimosas.)
Cooking good food, and serving it to people who find comfort in it, is magic. Maybe for some it’s a big salad, and for others it’s biscuits and gravy. For me, it’s all of the above, at different times, for different reasons.
Nothing brings together people like food. I love hosting and I love it when my house is bursting at the seams with people stuffing their faces with delicious food, whether it's imported fine cheeses and locally sourced honey with homemade seed crackers, or a hot dog smothered in chili. Food is my happy place. I want to share that with all of you; I hope you enjoy what I've created.
